Recipe for Veal Patties with Mashed Potatoes
Juicy, golden-brown and wonderfully aromatic: veal Pflanzerl are a particularly fine variation of the Bavarian classic. Served with creamy mashed potatoes, this dish delivers honest, down-to-earth indulgence – perfect for Sunday lunch or whenever true comfort food is called for.
Ingredients for 4 people
- 1 kg floury potatoes
- 500 g minced veal
- 350 ml milk
- 50 g butter
- 1 stale bread roll
- 1 small onion
- 1 egg
- 3 tbsp oil
- 2 tsp mustard
- 1 garlic clove
- 2 tbsp chopped parsley
- 0.5 tsp marjoram
- Salt
- Pepper
- A little freshly grated nutmeg
- Optional: crispy fried onions
Preparation
Step 1: Cook the Potatoes Until Soft
For the mash, peel the potatoes, cut them into evenly sized pieces and cook in salted water for about 20 minutes until soft. Drain, allow the steam to evaporate briefly and mash finely using a potato masher or a press.
Step 2: Prepare the Mashed Potatoes
Add the melted butter and milk to the warm potato mixture and stir thoroughly until smooth and creamy. Season with salt and freshly grated nutmeg. Keep the mash warm in the oven until the veal Pflanzerl are ready.
Step 3: Patties - Mix the Ingredients
Soak the diced bread roll in milk, squeeze it out well and chop finely. Finely chop the onion and garlic and gently sauté in 1 tbsp oil until translucent. Mix the minced veal with the bread roll, egg, mustard, onion and garlic mixture, salt, pepper, marjoram and parsley until well combined.
Step 4: Fry the Patties
With damp hands, shape small patties (Pflanzerl) and fry them in a pan with 2 tbsp oil over gentle heat for about 4 to 5 minutes on each side until golden brown.
Step 5 Optional: Prepare the Sauce
Tip: For a “quick” sauce, deglaze the pan with a generous splash of water or stock, loosening the browned bits from the base with a wooden spoon. Simmer briefly, stir in a small knob of butter, season with salt and pepper and it is ready. To serve, arrange the mashed potatoes on plates, place the veal Pflanzerl on top and finish with crispy fried onions and the quick sauce.
